Chipotle Black Bean Chili Mix
An aromatic and delicious low-fat vegetarian chili with a bold, rich smokiness. Spicy. Gluten Free. Vegan. Serves 6.
INSTANT POT: Disregard first step on package. Add all ingredients to Instant Pot, seal lid, use bean/chili setting for 35 minutes.
CROCK-POT: Soak beans as per directions overnight, place drained beans and all additional ingredients in the crock-pot, cover with lid and cook on HIGH until dinner time.
NOTE: Add 1 lb. of ground beef, turkey or chicken. Top with grated Tex-Mex cheese/vegan cheese for additional spice. Add dollop of sour cream or plain yogurt to top of bowl for cooling effect.
